The Sidamo variety is grown by several family farms within the Hawissa organization, located in the Sidama zone, south of Yirgacheffe, Ethiopia. These farms practice 'garden agriculture,' meaning coffee is cultivated within forests to provide shade for the plants, and their annual coffee yield does not exceed five bags.

THE ROAST

To optimally express the meticulous cultivation processes and the washed processing method, we roast the Sidamo with a light roast. This roast helps preserve the natural flavors and aromatic compounds in the bean, resulting in a coffee cup reflective of its origin, the birthplace of coffee. The cup showcases flavors of blueberries, cinnamon, and a finish of dark chocolate.

Origin

As befitting the birthplace of coffee, coffee bushes in Ethiopia have undergone mutations, hybrids, and changes since the 9th century. Like in any family, many sub-varieties have emerged with somewhat shared genetics but slightly different behaviors and tastes

Farmer

At the heart of our Ethiopia offerings are the farmers of the Hawissa Cooperative in Sidama—a community deeply rooted in coffee tradition. As part of a broader initiative in Jimma and Agaro, we support over 600 family farms facing the challenges of climate change, helping them improve yields and quality. In return, we gain access to distinctive, high-grade coffees that celebrate their land and craftsmanship.

Cup

While brewing our Ethiopia Sidama, you’ll experience a cup that tells the story of its birthplace—where coffee first took root. Grown in high elevations and carefully washed, this coffee is roasted light to highlight its vibrant character. The result is a clean, expressive cup with delicate notes of blueberries, a gentle hint of cinnamon spice, and a lingering finish of dark chocolate. Every sip reflects the unique terroir of Sidama and the generations of knowledge behind each bean.
