THE ROAST

CITY ROAST — DROP: 372.2°F

In our lab, we conducted various experiments to create a coffee with presence while preserving its terroir-driven character. Ultimately, we chose a City+ roast for the Catuai. This medium roast produces a cup with notable depth and density. The expected flavor profile includes chocolate, cocoa, and nuts.

Origin

In Costa Rica’s Tarrazú mountains near San Marcos, the San Rafael farm cultivates Catuai at 1600m. Volcanic soil, cool mountain air, and tropical rains create ideal conditions. This “Land of Saints” is famed for coffees with density, depth, and elegance.

Farmer

The San Rafael family farm grows Catuai with care and tradition. Washed at the Palmichal mill, their coffee reflects Tarrazú’s terroir. Though Catuai yields are low, the altitude ensures dense beans and rich sugars—key to its complex, chocolatey profile.

Cup

Roasted to City (drop: 372.2°F), this Catuai shines with notes of chocolate, cocoa, and nuts. The medium-light roast brings structure and presence while preserving its natural sweetness and balance. A creamy body, floral aroma, and clean finish complete the experience.
